It isn't our typical vacation, but amazingly our trip on Alaska Disney Wonder Cruise out of Vancouver was pretty good and one we'd recommend to any family with young kids.

Rappel, cross a stream, hike to a waterfall, pick blueberries
Crossing to Canada to see Emerald Lake, named for the green water from limestone
Carcross Desert - world's smallest desert caused by silt forming and then water evaporating
Hike to Upper and Lower Lakes, Skagway
Day 5 - Juneau floatplane to see the grizzlies at Pack Creek, Admiralty Island
Prices for bear excursions with guides were ridiculous, Bryson couldn't meet the age requirements, Alex insisted on seeing brown not black bears... Luckily I was able to get a permit to make a DIY trip work. I booked a flight on Ward Air, we luckily had park rangers to greet us and orient us to the bears, and we saw 8 bears total including 2 mama bears and their 4 cubs who were hunting for salmon

Day 6 - Ketchikan with Bering Fishermen Excursion (filmed with Uncle Phil's show Deadliest Catch) and Disney Lumberjack Show where Alex and I did some axe throwing. Then closed with seeing salmon spawning and Scarlet and Bryson getting to do a little fishing
Bering Fishermen tour included seeing eagles feeding, an octopus, and a touch pool with lots of crabs, shrimp, and a spindly starfish

Animation Night - we drew our own characters that joined Mickey and gang on screen for our own film
So many activities on the Disney Wonder including animation drawings, crafts, origami, scavenger hunt, character meet and greets, movies, shows (comedy, ventriloquist, Broadway song and dance, music, magic, etc.). Here is Bryson's pluto drawing.
All in all, the cruise was surprisingly a hit with everyone in the family. The service was amazing, the port adventures were a great way to get closer to nature, and there was lots to do.
